New recipe: Power Up with Pomegranate Fruit Jelly

Charcuterie. What a fun word. Seriously, say it out loud a few times: char – cute – ur – ee. The sound really dances on the tongue, just like the cheese and crackers that pair so well on its plates. Thanks to Chef Teresa Hansen, you can give your appetizer board a medicated upgrade with this fruit jelly goat cheese recipe.

Teresa has found the perfect fruit to pair with a strong cheese like the goat variety: pomegranate. Not only are they tart and delicious, but these seedy berries have perhaps the most health benefits of any fruit. They’re effective at keeping blood pressure down, have anti-inflammatory properties and can help sharpen your memory – hey, reminds us of a certain plant we’re pretty fond of!

Fruit Jelly Goat Cheese

Prep Time: 10 minutes

Cook Time: 15 minutes

Yield: 10 servings (10 mg per serving, about 2 Tablespoons)

Ingredients

100mg Good Things Coming Pomegranate Fruit Jellies

10 ounces frozen wild blueberries

2 tablespoons honey

2 tablespoons chia seeds

10.5 ounces goat cheese

Preparation

1. Cut each fruit jelly into quarters so that you have 40 smaller pieces.

2. Add pomegranate jellies, wild berries, honey to a medium non-stick sauté pan.

3. Cook over medium high heat for 5 minutes, until berries begin to cook down.

4. Add chia seeds and reduce heat to a medium simmer. 

5. Cook for another 10 minutes, using a wooden spoon or spatula to break down and smash fruit jellies.

6. Once mixture has thickened and jellies are reduced to smaller pieces, remove from heat and completely cool.

7. Once cool, pour mixture over goat cheese and serve with crackers, fruit and nuts.
