Medicators looking for a tasty way to get mellow have taken to the humble muffin from top down for decades, likely owing to its unique crumbly/pillowy texture ratio. If you’ve been following along with our recipe posts, however, you know we’re not just gonna give you the expected confection and call it a day.
No, our baker extraordinaire Chef Teresa Hansen is gonna have you mixing in mangoes, bananas, cinnamon and ginger for a gluten-free muffin that would be first pick at any all-you-can-eat breakfast buffet. Whisk in 10mg CBD per muffin, and each bite will send you further into your morning melt.
Oh, and they’re only 150 calories each, less than half of what you’d find in a typical coffee shop muffin. And they’ve got 5 grams of protein. And only 20 carbs. And bananas. Did we say that? Enough stalling, let’s make some muffins.
CBD Mango Banana Muffins
Prep Time: 15-20 minutes
Bake Time: 18-20 minutes
Yield: 20 muffins, 10mg CBD per muffin
Ingredients
200mg CBD isolate
1½ cups gluten free flour
½ cup almond flour
½ cup flax meal
½ cup coconut sugar
2 teaspoon baking powder
½ teaspoon baking soda
1 teaspoon cinnamon
½ teaspoon salt
½ cup coconut oil, warmed
1 tablespoon minced ginger
4 eggs
2 bananas, mashed
1 cup finely chopped mango
Preparation
1. Whisk together gluten free flour, almond flour, flax meal, sugar, baking powder,
baking soda, cinnamon and salt in a large mixing bowl.
2. Whisk together warmed coconut oil and CBD isolate in a small bowl until fully
mixed.
3. Stir CBD coconut oil with ginger, eggs, bananas and mango. Add wet ingredients
to dry ingredients and gently stir until combined.
4. Scoop batter into a muffin tin lined with muffin liners and bake at 350°F for 18-20
minutes or until lightly golden and cooked through.
5. Remove from oven and cool.
